Context

Measuring the territorial impact of a central kitchen engaged in local supply chains

The Central Kitchen Bordeaux-Mérignac is tasked with managing a Central Production Unit (CPU) for culinary purposes, meaning the preparation, production, and delivery of meals for users and schools in the cities of Bordeaux and Mérignac, with nearly 24,000 meals per day to produce.

Since 2019, it has made a strong political commitment by sourcing from agricultural and agri-food suppliers in the region, mostly organic, with multi-year contracts. The need arose to identify the effects of this strategy and measure the socio-economic impacts as well as the catalytic effects on regional sectors.

A quantitative analysis to reveal the leverage effect of local purchases

Vertigo Lab quantified the socio-economic impacts between 2019 and 2024 using a thorough methodology: data collection, processing, and analysis through the use of our tool Impacter.

We then analyzed the catalytic effects related to the SIVU's sourcing on territorial development and agri-food sectors through an impact pathway, a consequence tree, the definition of custom indicator sets, and interviews with 10 stakeholders and analysis. Contributions to the maintenance and development of organic and local sectors were also characterized.

The studied areas included Bordeaux Metropolis and New Aquitaine.

The mission allowed for measuring and objectifying the contribution of the central kitchen to the economy and employment in New Aquitaine. It also highlighted its role in supporting regional organic and agri-food supply chains, while providing solid elements to support advocacy with public and institutional partners.
