Structuring a vegetable processing sector for the city of Bordeaux
Context
Building a local sector to strengthen food resilience
Bordeaux Métropole aimed to promote local productions by setting up suitable processing tools (such as a vegetable processing facility or a canning factory), relying on existing or developing projects in the area. The goal is to meet the growing demand for fourth range products (that is, ready-to-use vegetables, washed and cut) by supporting local agriculture.
The need focused on supporting existing stakeholders to strengthen them, as well as assisting partners to capitalize on successes and coordinate actions.

An analysis and modeling to build a viable sector for the metropolis
Through a technical and economic study, Vertigo Lab analyzed the needs of producers in the area, then modeled the existing and future processing sector by developing scenarios. Meetings with stakeholders were organized, and a scenario was created incorporating technical and economic modeling as well as legal and governance structuring.

The mission allowed for an assessment of the existing sector, as well as the consolidation of collective dynamics. It also produced well-argued and substantiated scenarios facilitating political decision-making, as well as operational deliverables enabling action.
