Context
Building a local sector to strengthen food resilience
Bordeaux Métropole aimed to promote local productions by setting up suitable processing tools (such as a vegetable processing facility or a canning factory), relying on existing or developing projects in the area.
L’objectif est de répondre à la demande de la restauration collective en produits de 4ème gamme (c’est-a-dire les légumes prêts à l’emploi, lavés et découpés).
The need focused on supporting existing stakeholders to strengthen them, as well as assisting partners to capitalize on successes and coordinate actions.

An analysis and modeling to build a viable sector for the metropolis
A travers une étude technico-économique, Vertigo Lab a analysé le besoin auprès des producteurs, transformateurs et lieux de consommation (restauration collective, magasins spécialisés, etc.) ; puis a modélisé la filière de transformation existante et future en élaborant des scénarii.
Des rencontres avec les acteurs ont été organisées, et un schéma de structuration de cette filière a été élaboré. Ce schéma intègre une modélisation technico-économique ainsi qu’une structuration juridique et de gouvernance.
